Mister Miyagi glosses over it but tells a story in his family dojo about how one of his ancestors went to China, learned White Crane Kung Fu, and basically adapted it to become karate as we know it. This is basically the story of how it happened in real life but over centuries with many different people. Miyagi could have been telling a family legend but his family dojo traces it back to the ancestor and it seems to be true in-universe.
